Supper...

was really good tonight! I made it in about 20 minutes, and the recipe will be a keeper!

My sister and I brought my father and nephew on a little road trip this afternoon to see first hand some of the damage that was done by one of the storms in December. We left mom at home recovering from a medical procedure. I brought snacks of cut up fruit, crackers, and cheese. My sister brought granola bars. My dad? Well he brought his coffee, a sandwich, his cigarettes and his folding stool.

It was a cool afternoon on the beach, but great for walking. My dad can't walk very far without needing to sit and rest now, so we made sure he was ok by himself and we walked, found beach glass, saw the wind turbines in North Cape, PEI across the strait ( which amazed my nephew, checked out the damage and had a great afternoon.

We dropped my dad off at the house and chatted for a bit, the main topic being what to have for supper? I had some cold cooked pasta in the fridge that needed to be used up, along with some not so hot looking veggies. I decided to cook some ground beef and at canned tomatoes and the pasta. However that's not what I ended up making! I'm calling it:

Sam's Salsa Pasta

cook 3/4 lb of beef, adding 1/2 cup chopped onion, 2 stalks of celery and 1 clove of sliced garlic when the beef is almost cooked thoroughly. Add 1 cup of quartered cherry tomatoes, 1/2 cup diced red pepper, 1 cup of cooked spinach and stir. Add to taste Franks Hot Sauce ( I used 4 good dashes) I added Zesty Pepper seasoning ( I buy it at the Bulk barn, tex mex seasoning, a little salt and pepper. I then added 3-4 cups of cooked spiral pasta and about 2/3 of a cup of salsa. Mix and heat. It tastes similar to Taco beef hamburger helper, but much better.

I used up what was in the fridge/freezer instead of letting it go bad and toss it in the garbage!

Anyone else make something yummy out of the bits and bobs in the fridge lately?

Those wind turbines are amazing and really huge when you see them up close.
I'm surprised you could see them. What beach were you at to have such a great view? It certainly must have been a clear day.
